Heart to serve
Many times, heartbroken. Plenty times, fulfilled.
During this instance, I feel very happy about a customer, yelling “OH MY GOSH! THIS IS SO GOOD! BETTER THAN **** ********!!!”
I was absolutely flattered, as that place she screamed was one of those I loved in the past.
She ordered a Mocha Latte.
The thing is… Everything I have on my menu took time to develop & finally be confident about suggesting to a customer, simply because it tastes so good. Upon speaking about a beverage, finding excitement about our curation can easily sell it to a guest.
Throughout the development of our Mocha Latte, I’ve wanted to replicate that rich, creamy taste of chocolate from The Philippines. From 100% Pure Tablea, only served Hot on an 8oz, to a Mocha enjoyed, 12 oz hot or 16 oz iced.
Rather than letting the purist in me project the uniqueness of serving a Hot Mocha, I had to find the balance in where a memory that lives in my heart can translate to the enjoyment of a guest.

this is not just about our Mocha Latte. This is the image I’d love to draw for the growth of Pour Over the Rainbow.
Staying as a purist allows me to enjoy the little tucked corner of being a nerdy coffee person. Pour Over the Rainbow staying in business allows me to enjoy the smiles & delight of our guest when a beverage is pleasant to their palette.
It’s a win-win. What keeps me alive though is when I make someone happy. Something that I already normally do makes people happy. You know what makes me happy too? If a hobby turned into a business can sustain me, build a dream, and help build someone else’s dream as well. And so, maybe having the heart to serve can build this coffee empire XD
I love black coffee, however my brain always switches to “What does this person normally like, and what do we offer, so that we both meet in the middle and everyone in this transaction is happy” ?
Still ain’t sacrificing flavor over quantity. So if I say “no”, I’ve fought hard with myself on this already. Just so you know. Anyways, always a pleasure to serve you!
